Arriving in Nadi for 48hrs, whats a day trip we can do to see some beautiful beaches/go snorkeling/see a waterfall... anything?? I know its not much time, is it even worth trying to do a day trip to one of the nearby islands?

there are a few options for you

You could head to the coral coast - 1.5 hour drive. Along the way stop at Natadola Beach and see the best beach on Viti,, as good if not better than the islands...(cheeky claim :-) but its definately the best beach on viti and its stunning.
Stop at Sigatoka and view the real fiji and locals going about their business, wander through the market and learn about local produce, meet the locals and make sure you buy a glass of the local freshly squeezed juice.
Head further up the coast to do the waterfall horseriding tour, fantastic tour and book in for the lovo and eat some of the wonderful produce you eyed off at the market.
in the afternoon head to Votua village near by, stop at Eco Cafe and meet Fabi and Dangs who will entertain you and look after you. Take their hot springs tour in the late afternoon and walk back in the cool of the evening feeling totally refreshed and finish the evening with great conversation, food and italian coffee.
Stay the night on the coast - mango Bay resort, the beachouse are a few excellent backpackers, or you have your resorts, Warwick, outrigger etc if thats your thing.
Wake up on day two and snorkel the Marine Protected Area. Fabi and Dangs will contact an authorised person to take you out. Its amazing snorkeling and its as good if not better than any other snorkeling areas in all of Fiji. You will be in awe at the massive clams, stunning fish and hugh colourful coral.
Once done, head back to Nadi and you will have done what most people dont get to do in one whole holiday there :-)

Have fun

Have to agree with all your comments. If you are anywhere near the Coral Coast visit Eco Cafe with your hosts Fabi and Dangs. Everything about the place is outstanding - the views, the food, the company, the coffee and the stories. Just a short stroll up the beach from Naviti Resort. A must go place.
