New Caledonia and its French influences

What are some of the most obvious French influences on New Caledonia?

Thinking in particular of cuisine, architecture, social issues (healthcare, etc.), liberal issues, beach habits, quality of life, etc.. or whatever else that could be a French influence.. ?

The French influence in NC is self-evident in that the language, food etc is all pervasive in the areas near Noumea and in the South generally.This is to be expected as the number of French people and their decendants are large in number.Noumea is in many respects a French city ("Paris in the Pacific")

Away from there (Noumea and the South) , however, the "influence" is still apparent but the Islander (Kanak) culture is more dominant.
