Huahine is a beautiful island with a stunning lagoon.
There appear to be sailing day trips operating out of Huahine, from Fare which is the main town.If you google Huahine sailing or boat trips or Fare I think you will find some information. I expect these would be quite expensive, but fantastic. We did not spend much time in Fare, but went down the western side of the island to Baie d'Avea, where there is a reasonable anchorage. There is very good snorkelling off the beach at Baie D'Avea.As we were already on a boat we didnt make any enquiries about boat trips, but there are plenty of boats around, both yachts (local and visiting), as well as launches. Also, outrigger canoe paddling is the national sport in French Polynesia, and there are paddlers with the latest high tech canoes everywhere. I only saw the island by boat, so cant comment on the landward side. I think either would be wonderful. Also, I dont think you can get right around Huahine inside the lagoon, as there is coral blocking the route east of Bai D'Avea.
