South Pacific-themed dinner party

Country forums / Pacific Islands & Papua New Guinea

I'm planning on throwing one soon and am looking for ideas! Will be cooking for a lot of people, so nothing too complicated. Could you recommend South Pacific dishes please, particularly fish-based - starters, mains, salad, a dessert. Also, where can i buy Kava in the UK?

Thanks!

Everything Coconut, put it in marinated raw Fish w/Lime, Prawns fried with Coconut infused batter, baked Cassava/Taro root wrapped in Banana leaves.

Phone the Fijian Embassy to ask about Yanqona

Hi Jessica,
Here's a recipe for Ika Mata from the Cook Islands

Produces 10 portions

1kg firm fish like Tuna, cut into small cubes
160ml lime juice
180g diced capsicum
120g diced onion
180g diced tomato
1 can 400ml coconut cream...try and find a Samoan brand, the Asian ones are to sweet.

Marinate fish for 30 mins in lime juice, drain and add the rest of the ingredients, salt & pepper to taste, chill and eat...

Mix some Rum based cocktails and Enjoy...

I once bought Tarot at Brixton maket, they also had that time cassava and Yaqona. But this is a decade ago. You know any Fijian in the British army? They should be of help - at least where to find the grog.
Kokoda (seems that is the same as Ika mata as above) would be a wonderful starter - get fresh tuna cut in thin slices, marinate it with lots of lemon, add a chillie, diced tomatoe and coconutmilk - if you don't have a grater use tin product. I once wrecked my kitchen machine trying to grate a fresh coconut, bit of salt, bit of fresh coriander. Tha'ts for a starter.
Or fish with cabbage in lolo: cook a fish - best some coral trout with an english cabbage ( of course cut into pieces, both fish and cabbage), onion, chillie, garlic, salt and pepper in coconut milk.
Cassava balls ( lots of work) peel and grate cassava, mix with flour and eggs, salt and pepper ( like dumplings), form balls, first boil, then let the balls cool down and fry quickly in some butter.

And an easy cheat: buy frozen spinach and a can of coconut milk: fry spinach, add the coconut milk and a bit of spice - srt of rourou.

Enjoy your party!

Not sure if this a funsy party or one that is somewhat more serious and refined... If it is the former, here are some ideas as I have had a Tropical island themed party...

For an easy and yet tropical dessert you could make a smart South Pacific fruit salad...

Cube up equal parts of fresh mango, papaya and nice, sweet pineapple... add some other exotic tropical fruits if you can get them like Jackfruit, guave, passionfruit or Soursop (Sasalapa in Samoan)... Add some shredded coconut... chill and serve.

If you live in a city that has those "Dollar" or "Everything for a Pound" stores, go and look around for interesting and maybe even a little tacky party favours.... Woven straw or bamboo place mats and paper pineapples... Scatter some little packets of those plastic tropical fish and clear, blue glass balls to represent the sea... I know you can get those Tiki torches really cheaply (at least here in Canada) at Walmart or outdoor living stores... Go to a travel agent and see if you can get some airline or travel company posters of beaches and islands to put up in your party space...

And for heaven's sake what ever you do, do NOT forget the paper umbrellas for your cocktails!!! (:

Pisupo

Put a slice of cooked Corned Beef on a Silverbeet (Chard) leaf.
Add thinly sliced onion, a spoon of coconut cream and pepper to taste.

Roll into a parcel using the leaf.

Cook in oven at low heat in a Baking Paper and Alfoil "envelope" until onion softens.

Serve with one whole suckling pig per person

Continue eating until tired
